Chunky Applesauce – Rachel Alix

8-10 large cooking apples, peeled, cored, and sliced or cut in chunks

1/2 cup water

1 tsp. cinnamon

1/2 to 1 cup sugar

Put ingredients in crockpot.  Cover and cook on low 8-10 hours or on high 3-4 hours.  Serve warm.   Add ice cream.

Meatballs – Tarryn Colson

1 package frozen meatballs (Swedish or Italian style)
1 jar Grape Jelly
1 jar Chili Sauce

Throw everything in the crockpot with a little water and let it go! If you want it less sweet, put in a little less grape jelly. Otherwise, the recipe calls for equal parts jelly and chili sauce.

Creamy Italian Chicken – Ky Stucki

1 stick of butter (1/2 C.)
1 package of cream cheese (8 ounces)
1 packet of dry italian seasoning (dressing mix)
1 can cream of chicken soup
4 chicken breast
cooked bacon

Through everything except the bacon into the crock pot cook on low for 4-5 hours or on high for 3-4 hours.  Stir in cooked bacon and serve!

BBQ Chicken Sandwiches – Megan Peterson

frozen or thawed boneless, skinless chicken breast (2-6 pieces)
1 Bottle of BBQ sauce
1 cup of water
Put everything in Crock-Pot and set on low 8 hours or high 4 hours.
Shred chicken with two forks and serve on rolls.

Black Bean and Corn Soup – Sara Apke

2 1/4 cups dry black beans (1 lb)
1 10-oz pkg frozen whole kernel corn
1 c chopped onion
4 cloves garlic, minced
1 T ground cumin
1 t salt
1 t ground coriander
1/4 to 1/2 t bottled hot pepper sauce
4 c boiling water
1 14 1/2 oz can Mexican style stewed tomoatoes
1 recipe Pepper Salsa  (1 1/2 c finely chopped yellow
and or green sweet peppers; 1 finely chopped small
jalapeno pepper; 1/3 cup chopped, seed tomato; 1 T
snipped cilantro.  Cover and chill up to 24 hours.)

Rinse beans; place in large saucepan.  Add enought
water to cover beans by 2 inches.  Bring to boiling;
reduce heat.  Simmer, uncovered, for 10 minutes.
Remove from heat.  Cover; let stand for 1 hour. Drain
and rinse beans.
In a 3 1/2 , 4, or 5 qt crock pot combine the beans,
corn , onion, garlic, cumin, salt, coriander, and hot
pepper sauce.  Pour boiling water over all.
Cover; cook on low-heat setting for 8-10 hours.  To
serve, mash beans slightly to thicken.  Stir in
tomoatoes.  Serve with Pepper Salsa.
Easy and yummy!  We like it with sour cream too.

Ham and Tater Tot Breakfast – Janae Shearer

1 lb. frozen tater tots

1/2 lb. diced ham

1/2 cup chopped onion

1/2 cup green pepper diced

3/4 cup shredded cheddar cheese

6 eggs

1/2 cup milk

In crockpot, layer ingredients in order: Tater tots, ham, onions, green pepper, and cheese. Repeat two more times, ending with a layer of cheese. In a bowl, beat eggs and milk. Salt and pepper to taste. Pour mixture over layers in crockpot. Cover and cook on low for 8-10 hours.

Chocolate Pudding Cake – Janae Shearer

1 pkg. chocolate cake mix (any two laye size)

2 cups sour cream

1 pkg. instant chocolate pudding (any size)

6 oz. semisweet chocolate chips

3/4 cup oil

4 eggs

1 cup water

Spray crockpot with non-stick spray.  Mix all ingredients together.  Cook on low for 6-8 hours. Try not to lift the lid.  Serve with ice cream.
