25-30 slices of ham
1 bag of cornbread stuffing mix (or two sm. boxes)
25-30 slices of swiss cheese
Prepare stuffing according to box ADDING 1/2 of apricot preserves mixed with the water called for on the package. Also you can cook 4 TB of onion in some butter and add them to the stuffing mixture as well. I just added a few shakes of onion powder to the recipe at enrichment.
Place one slice of cheese and some of the stuffing mixture on one slice of ham, roll and secure with toothpick.
Bake at 350 for 45 minutes or Less!
Glaze:
1 TB cornstarch
2 TB brown sugar
1 C. water
1 C. pineapple juice
1 TB butter
1/4 C. apricot preserves
Mix cornstarch and brown sugar set aside. Combine water and pineapple juice and cook on stove-top slowly adding brown sugar/cornstarch mixture. Bring to a boil remove from heat. Stir in butter and apricot preserves. Drizzle over ham roll-ups!
